Grilled Kebabs 

Ingredients:  
Beef mince  (fine)                                  250 grams
Egg                                                          1
Ginger/garlic paste                                2 tsp
Fresh coriander    (chopped)               1 tbsp
White vinegar                                         1 tbsp
Green chillies   (chopped)                    4
Onion    (chopped)                                 1
Tomato (chopped)                                  1
Thyme                                                      1 tsp
Salt                                                           to taste
Oil                                                             2 tbsp
Mint and green chillies                          for garnishing 

Method:  
  • Mix all ingredients except oil thoroughly in a bowl.
  • Shape into long kebabs and skewer onto sticks.
  • Brush oil on kebabs.
  • Grill kebabs over coal or bake in oven.
  • Garnish with mint and green chillies; serve.

Vegetables with Fenugreek

Vegetables with Fenugreek

Ingredients: 
Fenugreek                                          1 bunch
French beans
(finely cut)                                           250 grams
Potatoes  (cubed)                               2
Peas                                                     1/2 cup
Tomatoes  (cubed)                              3
Onion                                                   1
Coriander powder                              1 tsp
Cumin powder                                    1 tsp
White sesame seeds                         1 tsp
Red chilli powder                              1 tbsp
Ginger/garlic paste                           1 tbsp
Turmeric powder                               1 tbsp
Fresh coriander (chopped)             1/4 bunch
Lemon juice                                       1 tbsp
Water                                                  1/2 cup
Salt                                                      to taste
Oil                                                        3 tbsp

Method: 
  • Boil tomatoes, French beans, peas and potatoes, Blend onion, coriander, cumin, red chillies, sesame, ginger/garlic, turmeric and water in a blender.
  • Heat oil in a wok; fry onion masala till oil separates. Add French beans, potatoes, fenugreek and peas; cook.
  • 5 minutes before removing from flame, add salt and fresh coriander; add lemon juice

Ingredients:  
Beef                                                        1/2 kg
Rice noodles                                         250 grams
Onion  (finely cut)                                 1
Cornflour                                               1 tbsp
White vinegar                                        3 tbsp
Brown sugar                                          1 tbsp
White pepper powder                          1/2 tsp 
Soya sauce                                             3 tbsp
French beans(cut into small pieces)  1/2 cup
Garlic (chopped)                                    2 tbsp
Black pepper  (crushed)                       1/2 tsp
Salt                                                           to taste
Oil                                                            5 tbsp
Spring onions and green-                    for garnishing

Method:

  • Marinate beef with vinegar, brown sugar, white pepper, soya sauce, cornflour and salt; sat aside.
  • Heat oil in a pot; fry garlic and onion.
  • Add beef leaving behind the marinade, and fry.
  • Add water and cook till beef is tender.
  • Add black pepper, french beans and the marinade; mix and fry thoroughly. dish out.
  • Serve with noodles, green chillies and spring onion.

Fish with Pineapple Salsa

Fish with Pineapple Salsa

Ingredients:  
Fish pieces                                            1/2 kg
Olive oil                                                  2 tbsp
Salt, black pepper (crushed)               to taste

Salsa Ingredients
pineapple (chopped)                            100 grams
fresh coriander  (chopped)                  3 tbsp
Lemon juice                                           4 tbsp
Mint (chopped)                                      1 tbsp
Spring onions  (Chopped)                    5 stalks
Black pepper (crushed)                       to taste
Olive oil                                                  1 tbsp

Method:  
  • Marinate fish with olive oil, salt and black pepper; wrap in aluminium foil.
  • Place fish in a baking tray; bake in a pre-heated oven at 180C for 15 minutes; remove.
  • Mix all salsa ingredients in a bowl.
  • Remove fish from foil; place in a serving dish; garnish with salsa and serve.

Chilli Parcels

Ingredients: 
Capsicums                                                        4
Onion                                                                1
Bottle gourds (cut into small pieces)            2
Tomatoes   (chopped)                                     4
Black olives  (finely cut)                                 10
Feta chesse                                                     100 grams
Basil leaves                                                     10
Black pepper  (crushed)                                1/2 tsp
Salt                                                                    1/2 tsp
Olive oil                                                            to taste

Method: 
  • Cut capsicums lengthwise from the centre; de-seed.
  • Mix all ingredients in a bowl except capsicums and cheese.
  • Fill mixture in capsicums.
  • Place cheese on top; sprinkle olive oil and wrap capsicums in aluminium foils.
  • Place capsicums on a baking tray; bake in a pre-heated oven at 180C for 15 minutes and remove.

Ingredients:  

Beef mince                                             1/2 kg
Onion (fried and powdered)                 3 tbsp
Ginger/garlic paste                                1-1/2 tsp
All spices (powdered)                            1/2 tsp
Cantaloupe seeds (powdered)             1 tbsp
Raw papaya paste                                   1 tbsp
Yogurt (whipped)                                    1/2 cup
Red chilli powder                                    1 tsp
Hot spices powder                                  1 tsp
Green chillies (chopped)                        4
Fresh coriander (chopped)                    2 tsp
Salt                                                            1 tsp
Oil                                                              1-1/4 cup
Onions, tomatoes and fresh                  for garnishing

Method:  
  • Heat oil in a pot; fry ginger/garlic golden.
  • Add remaining ingredients and mix thoroughly.
  • place in pyrex dish; bake in a pre-heated oven at 160C for 30 minutes. Remove.
  • Smoke dish by pouring oil on a red-hot coal placed over fail on the mince.
  • Garnish with onions, tomatoes and fresh coriander.

Fried Rice with Chilli garlic Fish

Ingredients: 

Pomfret                                           3
Rice (soaked)                                 2 cups
Gralic                                              8 cloves
Lemon                                             3
Green chillies (finely cut)             6
Whole round red chillies              8
Turmeric powder                           1 tsp
Soya sauce                                     1 tsp
White vinegar                                1 tsp
Salt                                                  to taste
Oil                                                    3 tbsp + 1 cup
Fried onions and mint                  for garnishing

Method: 
  • Par-boil rice in water. keep aside.
  • Without washing, cut fish into pieces; apply vinegar and set aside for 10 minutes.
  • Wash fish; apply juice of 2 lemons, turmeric and salt.
  • Blend red chillies and 2 cloves of garlic in a blender; squeeze juice of 1 lemon in it. coat fish with the masala.
  • Heat 1 cup oil in a frying pan; fry fish and remove.
  • Heat remaining oil in pot; fry 6 un-chopped cloves of garlic golden. add rice; fry
  • Add soya sauce, vinegar, salt and green chillies.
  • dish out rice; place fish pieces on top.
  • Garnish with onions and mint.

Jalferizi filled capsicums

Ingredients: 

Capsicums                                          8
Carrot  (grated)                                  1
Potatoes (boiled, cubed)                   2
Green chillies (chopped)                   3
Chicken pieces (boiled)                     6
Peas (crushed)                                   1/2 cup
Tomato ketchup                                  1/2 cup
Cumin seeds (roasted, powdered)   1 tsp
Ginger/garlic paste                             1 tsp
Chilli sauce                                          1 tbsp
Red chillies (crushed)                        1 tbsp
Salt                                                        to taste
Oil                                                         1/2 cup

Method:  
  • Cup off tops of capsicums and de-seed with the help of a knife.
  • Heat 3 tbsp oil in a saucepan; fry ginger/garlic.
  • Add potatoes, peas, carrot, red chillies, cumin, tomato ketchup, chicken, chilli sauce, green chillies and salt; fry.
  • Allow to cool; fill capsicums with small amounts of chicken mixture. keep aside remaining mixture.
  • Cover capsicums with their tops and affix with toothpicks.

Ingredients:

Prawns                                              1/2 kg
Capsicum (finely cut)                      1
Coconut milk                                    1/2 cup
Brown sugar                                    1 tsp
Tamarind pulp                                  2 tsp
Salt                                                    to taste
Oil                                                     1 tbsp     


Sauce Ingredients: 

Onion (medium)                              1
Fresh red chillies                           2
Garlic                                               4 cloves
Ginger                                             1 medium piece
Fish souce                                      2 tbsp
Tomato puree                                 3 tbsp
Water                                              1 cup
Salt                                                  to taste
Oil                                                   2 tbsp   
Guraing Ingredients:   

Onion                                              1/2
Lemon rind                                     1/2      

Method:  


  • Blend fish sauce, onion, ginger, garlic, red chillies and 1/2 cup water in a blender.
  • Heat 2 tbsp oil in a work; add blended masala and cook for 5 minutes.
  • Add tomato puree and remaining water; cook for 5 more minutes and remove from flame. De-seed capsicum and cut into thin, long strips. Finely cut lemon rind and onion lengthwise; immerse in cold water.
  • Heat 1 tbsp oil in a frying pan; fry prawns.
  • Add capsicum, coconut milk, tamarind pulp, brown sugar, salt and sauce; cook for 5 minutes. Dish out prawns; garnish with onion and lemon rind;

Chinese Cabbage Parcels
Ingredients:
Chicken breast                          2
Button Mushrooms                   4
Black  Mushrooms                    2
Spring Onions (chopped)        2
Garlic(Chopped)                       3 cloves
Fish Sauce                                 2 tbsp
Chinese cabbage                      1
Black Pepper powder               1/2 tbsp
Tomato (Chopped)                    1
Green Chillies (Chopped)        3

Method:


  • sock cabbage-leaves in hot water till they soften.
  • Cut leek into long strips: dip in hot water and remove.
  • Blend remaining ingredients in a blender.
  • Place some mixture in the center of a cabbage leaf and fold in to a square: tie with a leek strip.
  • Repeat process to make remaining parcels.
  • Cook parcels in a steamer for 12 minutes.
  • Serve and Enjoy Delicious CHINESE CABBAGE PARCELS .

Ingredients; 
Chicken pieces                                    250 grams
Mushrooms                                          12
Chicken stock                                      1 cup
Chilli sauce                                          1 tsp
Soya sauce                                           1 tsp
Cornflour                                              1 tbsp
Sugar                                                    1 tsp
Ginger/garlic paste                             4 tsp
Chinese salt                                         1/2 tsp
Salt                                                        1/4 tsp
Oil                                                          7 tbsp


Method; 
  • Cut mushrooms into halves.
  • Marinate chicken pieces with chinese salt, sugar, salt, cornflour and 1 tbsp oil; set aside.
  • Heat remaining oil in a pot; fry chicken pieces and remove.
  • Fry ginger/garlic in the same oil; add chicken, chilli sauce, soya sauce, stock and salt; cook for 5 minutes.
  • Add mushrooms; cook for a few more minutes.

Mushrooms    (finely cut)                       1 cup
Garlic     (chopped)                                 2 tbsp
Cashew nuts                                           1/2 cup
Worcestershire sauce                           1/4 cup
soya sauce                                              2 tbsp
Brown sugar                                           1 tsp
Basil leaves                                            15
Salt                                                           to taste
Oil                                                            3 tbsp

Method;
  • Roast cashew nuts in a frying pan.
  • Heat oil in a saucepan; fry garlic and mushrooms golden.
  • Add soya sauce, worcestershire sauce, brown sugar and salt; cook for few minutes.
  • Add cashew nuts and basil;
  • SERVE HOT.

Pie Ingredients:
Refined flour  (sieved)                     1/2 kg
Butter  (saltless)                               100 grams
Castor sugar                                      1 cup
Baking powder                                  1 pinch
Filling Ingredients:
Pumpkins                                            1/2 kg
Fresh cream                                       1 cup
Castor sugar                                       2 cups
Cinnamon  (powdered)                      1/2 tsp
Eggs                                                     4
Dry fruits (chopped)                           for garnishing 

Method:
  • Mix pie ingredients and using water knead into hard dough.
  • Roll out dough and set in a pie dish.
  • Spread greased paper over pie; place kidney beans or chickpeas on it so that it doesn't rise from center.
  • Bake in a pre-heated oven at 200C for 20 minutes and remove.
  • Boil pumpkins and mash; add all ingredients except dry fruits.
  • Layer on top of pie and garnish with dry fruits.
  • Bake in a pre-heated oven at 200C for 15 minutes.
  • Serve and enjoy PUMPKIN PIE.

Ingredients:
Elbow macaroni (boiled)               500 grams
Beef mince                                     1/2 kg
Refined flour  (sieved)                 4 tbsp
Capsicum  (finely cut)                   1
Onion  (finely cut)                         1
Eggs                                                2
Green olives (finely cut)              6
Tomato ketchup                            1 cup
Mozzarella cheese                       1 cup
Carrot
(cut into rounds)                           1 cup
Parsley                                            1/2 bunch
Black pepper (crushed)               1 tsp
Red chillies (crushed)                  1 tsp
Basil leaves (chopped)                 2 tsp
Salt                                                  1/2 tsp
Butter                                              4 tbsp
Oil                                                    1 tbsp

Method:

  • Mix eggs, flour and macaroni in a bowl.
  • Grease pie dish with 2 tbsp butter; arrange macaroni mixture in it.
  • Bake in a pre-heated oven at 200C for 20 minutes.
  • Remove from oven.
  • Heat oil and remaining butter in a frying pan; fry garlic.
  • Add mince, black pepper, red chillies, onion, capsicum and salt; fry.
  • Layer dish with mince, tomato ketchup, parsley, basil, carrot, olives and cheese.
  • Bake in a pre-heated oven at 200C for 10 minutes.

Samosa Ingredients: 
Refined flour  (sieved)                        1/2 kg
Potatoes  (boiled, mashed)                 1/2 kg
Red chilli powder                                 1/2 tsp
Carom seeds                                        1 tsp
Dry pomegranate seeds                      1 tsp
Cumin seeds                                         1 tsp
Pakistani chinese salt                          1 tsp
Fresh coriander (chopped)                 5
Salt                                                         as required 
Chaat Ingredients
Yogurt                                                   1 cup
Tomatoes (chopped)                           4
Onion (chopped)                                  1
Mint (chopped)                                     1
Fresh coriander (chopped)                 1/4 tbsp
Sweet chutent                                       4 tbsp
Salt                                                         to tsate

Method:

  • Mix cumin, clarified butter and salt in flour; knead into dough.
  • Mix potatoes, pomegranate, chinese salt, red chillies, coriander, green chillies, carom seeds and salt in a bowl.
  • Roll out dough into a big round; cut into 4 pieces.
  • Shape each piece into a cone; fill with potato mixture; seal corners using flour paste.
  • Heat oil in wok; fry samosay golden and remove.
  • Blend yogurt, mint, coriander, green chillies and salt in a blender.
  • Place samosay in a serving dish; spread yogurt over them.
  • Garnish with tomatoes, onions and sweet chutney

Ingredients:  
Chicken  (boiled and cut 
into small pieces)                             1 cup
French beans  (boiled)                    1/2 cup 
Carrots  (finely cut)                          1/2 cup   
Cabbage  (finely cut)                        1/2 cup  
Cucumber  (cubed)                           1/2 cup  
Spring Onions (finely cut)                1/4 cup 
Lettuce  (finely cut)                           1/4 cup    
Dressing ingredients:
Chicken stock                                    1/4 cup
Peanuts  (roasted)                             1/4 cup
Red chillies  (crushed)                      1 tsp
Garlic (chopped)                                1 tsp
Cornflour                                             1 tsp
White vinegar                                     1 tbsp
Salt                                                       1/4 tsp
Oil                                                         2 tbsp

Method:

  • Heat oil in a saucepan and fry garlic to prepare dressing.
  • Add all ingredients except peanuts; cook for few minutes; add peanuts and remove from flame.
  • Mix all salad ingredients and dressing in a bowl; 
  • SERVE IMMEDIATELY.

Chicken Maifun Salad
Ingredients: 
Rice noodles                                    70 grams
Chicken breast pieces                    1 cup
Mushrooms                                       4
Chicken cubes                                  2
Rice vinegar                                      1/4 cup
Thai chilli paste                                 1/4 cup
White sesame seeds (roasted)       2 tbsp
Almonds(peeled and cut)                1/2 cup 
Brown sugar                                      1 tsp
Lettuce                                               1 cup
Spring onions                                    1/4 cup
Sesame oil                                         2 tbsp
Oil                                                       for frying  +  2 tbsp

Method: 
  • Finely cut spring onions, lettuce and mushrooms.
  • Fry mushrooms with 2 tbsp oil.
  • Heat oil in a wok; fry noodles for 1 minute; remove in a serving dish.
  • Heat water in a pot; cook chicken cubes and chicken on low flame till chicken is tender and water dries.
  • Mix chilli paste, vinegar, sesame oil and brown sugar in a bowl to prepare dressing.
  • Arrange vegetables, chicken, mushrooms, almonds, sesame and dressing over noodles 
  • SERVE.

Ingredients:
Fresh cream                               1 cup
Bananas  (finely cut)                  6
Mud apples  (peeled cut)          4
Apples  (peeled, cut)                 2
Pineapple pieces                       1 cup
Chickpeas   (boiled)                   1- 1/2cup
Castor sugar                               4 tbsp
Salt                                               1/2 tsp
Tamarind pulp                             4 tbsp

Chutney ingredients:
Tamarind                                      1/2 cup 
Sugar                                            4 tbsp
Red chilli powder                        1 tsp
Cumin seeds(roasted, crushed)1 tsp
Salt                                                1/2 tsp
Jaggery                                         1 tbsp

Method:
  • Cook Chutney ingredients in a saucepan till it thickens; remove from flame.
  • Mix all ingredients except sugar but including chutney in a bowl.
  • Add sugar.
  • DISH OUT AND SERVE  

Special Noodles

Ingredients; 
Egg noodles  (boiled)                      500 grams
Chicken breast  (finely cut)            1
Spring onion leaves (finely cut)     1/2 cup
Carrot  (finely cut)                            1
Capsicum   (finely cut)                     1 cup
Garlic (chopped)                              1 tbsp
White pepper powder                     1/2 tsp
Soya sauce                                       1 tbsp
Sugar                                                1 tsp
Cornflour (dissolved in water)      1 tsp
Chicken stock                                  1 cup
Salt                                                    1/2 tsp
Oil                                                      1/4 cup

Marinade ingredients:
White pepper powder                     1/2 tsp
Soya sauce                                       1/2 tbsp
Cornflour                                          1 tbsp

Method; 
  • Marinate chicken with marinade ingredients and set aside for 10 minutes.
  • Heat oil in a pot fry garlic add chicken and fry.
  • Add stock bring to a boil.
  • Add all ingredients except spring onions and cornflour; cook for 10 minutes.
  • Add cornflour gradually and thicken sauce.
  • Add spring onions and remove from flame.
  • Take out noodles in serving dish 
  • arrange prepared chicken on top 
  • serve.

Ingredients;
Beef  (with bones)                           1/2 kg
Puff pastry dough                            200 grams
Ginger/garlic paste                         1 tbsp
Chicken cubes                                 2
Tomatoes   (chopped)                     2
Potato  (small, cut into cubes)       1
Carrot  (cubed)                                1
Onions  (fried)                                 1/2 cup
Whole red chillies (round)              8

Method;

  • cook beef with ginger/garlic, cardamoms, cinnamon, cloves, whole red chillies, oil and 1 cup water till tender.
  • Add black pepper, hot spices, chicken cubes, re chilli powder and salt; fry for 5 minutes.
  • Add onions, tomatoes, carrot, potato and remaining water; cook for 10 minutes.
  • When water dries, remove in a pyrex dish.
  • Roll out puff pastry dough; cover dish with it.
  • Bake in a pre-heated oven at 200C for 20 minutes.
  • REMOVE AND SERVE     Puff Stew

White sesame seeds                         1/2 cup
Onion                                                   1
Garlic                                                   3 cloves
Ginger                                                 1 inch piece

Cornflour                                             1 tsp
Pistachios                                            25 grams
Black pepper powder                        1/2 tsp
Green chillies                                     2
Spring onion                                       1
Salt                                                       to taste
Oil                                                         for frying


Method:  
  • Blend all ingredients except sesame seeds and oil in a blender.
  • Make small balls; coat with sesame.
  • Heat oil in wok; fry balls and remove on absorbent paper.
  • Serve Chicken sesame balls with tomato ketchup and chilli garlic sauce.

Ingredients;   
Refined flour   (sieved)                        1-1/2cup
Baking powder                                      1-1/2 tsp
Baking soda                                           1/2 tsp
Castor sugar                                          1 cup
Eggs                                                        2
Yogurt                                                     1-1/4cup
Vanilla essence                                      1 tsp
Salt                                                           1 pinch
Butter                                                       4 tbsp
Frosting Ingredients;
Royal icing                                                2 cups
Red food colour                                       1 tsp
Bunties and sugar crystals                     for garnishing

Method: 
  • Mix flour, baking powder and soda, castor sugar and salt.
  • Whip eggs, yogurt, butter and vanilla essence in a separate bowl.
  • Fold-in flour-mixture with a spoon, little at a time.
  • Grease muffin mould; pour mixture in it.
  • Bake in a pre-heated oven at 180C for 20 minutes. Remove.
  • Mix food colour in 1/2 royal icing and keep remaining as it is.
  • Fill in separate piping bags.
  • When muffins cool, decorate with royal icing, bunties and sugar crystals.
  • Serve
  • To prepare royal icing add 1/2 tsp vanilla essence and 2 cups castor sugar gradually to 2 egg whits and beat till thick.
  • ENJOY DELICIOUS TODDLER MUFFINS.

Porridge Pan Cakes

Ingredients;  
Porridge                                              4 cups
Refined flour  (sieved)                      1 cups
Sugar                                                    1/2 cup
Baking powder                                    2 tsp
Baking soda                                         2 tsp
Milk                                                       4 cups
Lemon                                                   1
Eggs   (beaten)                                    4
Vanilla essence                                   1 tsp
Salt                                                        1/2 cup
Butter  (melted)                                   1/2 cup
                                                             + greasing


Method: 
  • Blend porridge in a blender.
  • Squeeze lemon in milk and set aside.
  • Mix porridge, flour, sugar, baking powder, baking soda and salt in a bowl.
  • Mix milk eggs, vanilla essence and butter in a separate bowl.
  • Fold in the dry ingredients into the wet ones and set aside for 1/2 hour.
  • Grease a medium frying pan with butter.
  • Fill a deep cooking-spoon with batter and coat frying pan with it.
  • Fry pan cake golden from both sides; remove;
  • Repeat process to prepare more pan cakes.
  • SERVE WITH BANANAS AND HONEY.
