Chicken Maifun Salad
Ingredients:
Rice noodles 70 grams
Chicken breast pieces 1 cup
Mushrooms 4
Chicken cubes 2
Rice vinegar 1/4 cup
Thai chilli paste 1/4 cup
White sesame seeds (roasted) 2 tbsp
Almonds(peeled and cut) 1/2 cup
Brown sugar 1 tsp
Lettuce 1 cup
Spring onions 1/4 cup
Sesame oil 2 tbsp
Oil for frying + 2 tbsp
Method:
- Finely cut spring onions, lettuce and mushrooms.
- Fry mushrooms with 2 tbsp oil.
- Heat oil in a wok; fry noodles for 1 minute; remove in a serving dish.
- Heat water in a pot; cook chicken cubes and chicken on low flame till chicken is tender and water dries.
- Mix chilli paste, vinegar, sesame oil and brown sugar in a bowl to prepare dressing.
- Arrange vegetables, chicken, mushrooms, almonds, sesame and dressing over noodles
- SERVE.
