Ingredients:
Fish pieces 1/2 kg
Olive oil 2 tbsp
Salt, black pepper (crushed) to taste
Salsa Ingredients
pineapple (chopped) 100 grams
fresh coriander (chopped) 3 tbsp
Lemon juice 4 tbsp
Mint (chopped) 1 tbsp
Spring onions (Chopped) 5 stalks
Black pepper (crushed) to taste
Olive oil 1 tbsp
Method:
- Marinate fish with olive oil, salt and black pepper; wrap in aluminium foil.
- Place fish in a baking tray; bake in a pre-heated oven at 180C for 15 minutes; remove.
- Mix all salsa ingredients in a bowl.
- Remove fish from foil; place in a serving dish; garnish with salsa and serve.
